Running Frustrations and Panko "Fried Chicken"

Let me preface this post by saying I'm not a Southern girl, but I do like me some fried chicken! However, I'm not really a big fan of actually frying things. Lately I've been doing a great job of keeping my cholesterol in check and I'd like to continue to do so :) So get ready for my take on "fried chicken," which is a misnomer since there's nothing fried about this chicken at all.

...After hearing about my recent return to running. As you see on the sidebar to the right, before yesterday morning, I hadn't ran in nearly 2.5 months. And I died a little bit inside not to doing so. Several weeks ago, I severely injured my knee. I'd seen two sports therapists, have been using Rock tape and have several stretches I do every few days for my knee and ankle and all the muscles in between. After going that long without running, I started to lose it.

How am I supposed to workout without running if I can't afford a gym membership (without a job), don't have access to a free pool and my knee hurt after even limited motion cardio activities?? I basically was restricted to OnDemand yoga and stretching, but nothing gave me that same feeling as when I ran. I think this triggered a minor bout of depression for me. Well, maybe that or being rejected by SEVEN companies I've interviewed with now.

Either way, I felt the need to test the water yesterday. My knee wasn't crackling as much and at 10 a.m. the weather in Phoenix had cooled down to 81°!!! It seems as if all signs were point to run.

Except, my knee is not yet ready for it. I could only manage 1.49 miles before it started to bother me. Post-run I underwent some major icing, stretching and then a warm bath.

I'm still extremely overwhelmed. Am I going to be able to run again?? How long is it going to take to get back into it?? How come there are people who run multiple marathons a year, and when I started conservatively training for a half marathon, I could only make it to 8 miles before blowing out my knee?? And am I going to get a job SOON before being rejected by yet another company so I can afford to go to a physical therapist again?

So many unanswered questions. I'm feeling miserable about this entire situation, so I guess I'll stick to my OnDemand workouts until I can ease back into running at the right time...

Let's move in a happier direction, shall we??? How about that recipe I promised you before my running rant.

Panko "Fried Chicken"

  • 6-10 chicken breast tenders
  • 1 1/2 c Panko breadcrumbs
  • 2 t Italian seasoning
  • 2 t garlic powder
  • 1 t cumin
  • 1/2 c flour
  • 1/2 t salt
  • 1/2 t pepper
  • 2 eggs
  • oil spray

Cooking directions: Preheat oven to 350°, while it's heating, coat a cookie sheet with oil spray (I used extra virgin olive oil). The prepare three shallow bowls for the chicken. In one, combine flour, salt and pepper. Crack two eggs in a second bowl. In a third final bowl, mix Panko, cumin, Italian seasoning and garlic salt.

Note: I only used six chicken tenders and found this was more mixtures than I needed. It could easily be cut in half, or use double the chicken.

Coat a chicken tender into flour, dip into egg mixture and then give them a final dunk in the bread crumbs. Repeat for all the chicken tenders then place them on the cookie sheet.

The chicken tenders should bake for 12-15 minutes, or until golden brown.

We had ours alongside sweet potato fries, dipping sauces of ketchup and apricot BBQ sauce and a big bowl of salad. Oh yeah, plus a chilled glass of white wine, which kept me amused during my wait for the tenders to cook!

Enjoy! They're a little different than your usual fried chicken, but still juicy and tender inside with a proper crisp on the outside! Dipping them in BBQ sauce was also fabulous :)

  2. Running and job woes - ugh. Hang in there - things are bond to turn around sooner or later. Good for your for stopping though after you felt pain. So many times, I just run through pain, which obviously makes things worse. Good luck!

  3. Apricot bbq sauce? That sounds awesome! We don't have many interesting ketchups or bbq sauces here in Australia, sadly.

  4. I make something really similar! But sometimes use breadcrumbs, instead of panko. I like the texture of panko though.

This probably is gonna sound weird, but you should try it with some freshly squeezed lemon over top! It is really really good. Kinda like with fish n chips, but also traditional snitzel.

  5. Yay, a recipe with enough things I can find in France so I can try it! :-) I know I shouldn't complain, food here is good too, but some of your recipes just look amazing and I can never make them, it's very sad.

Would a walk/run be easier on the knee? Interval training is good for the heart! And were you running on a trail or the sidewalk? Hopefully you can find something that doesn't hurt!

  6. It is really hard to get back to running after an injury. I am still surprised at how much milage I lost when I broke my foot. You'll get back into runs, just take it slowly.

  8. It took me at least 6 months completely off running to fully recover from runners knee..and it still bothers me every now and then. It is very frustrating because some days you'll feel fine, start running, and be in immense pain. And other days it'll be fine. :/ Sorry the run didn't go well..hope you get better soon. :) Until then I'd say wrap a brace around it even when just walking around or sleeping. It helped a lot when the flairs were really bad.

  9. Good for you for getting your run on! I love the whole "It cooled DOWN to 81 degrees bit" :)

I am starting to use panko more but am not completely sold on the texture of it.

  14. Oh dear ME I love some panko. Good idea on using it with this chicken! It's great on butterfly shrimp, too :)

I took some time off running this summer, too. I've been getting back into it for about a month now and I am finally starting to feel like my body is remembering what it's like. You'll get there, just take it one day at a time!

  15. Monique, you are so demanding of yourself! You had a major knee injury and hadn't run in nearly two and a half months, and you expect to be able to run eight miles again right away? Give yourself a break! Start really slowly - maybe even just with a nice, long walk in the evening when it's "cooled down" to 81, lol. I also like Andromeda's idea of mixing running and walking. Or are stair exercises good for your knee? Sometimes I use the stairs in my house as a stairmaster and walk up and down several times, walk around the house a bit, do another set of stairs, etc.

I'm sorry you're having such a hard time finding a job. Hopefully things will turn around soon. Until then, do as much as you can to keep yourself occupied because it's really hard to just sit around with nothing to do all the time. Believe me, I know! Maybe learn to knit or crochet, or do other art projects, study French, etc.

  16. Hang in there. Your injury sounds very similar to mine and therapy and exercises (tape too!) helped A LOT, even though I had my doubts along the way that it was helping. I'm back to training now and up to over 6 miles again. I think you'll be back running, it's just going to take a little time. In the mean time, you're making awesome things in the kitchen!

  17. I am so sorry about your frustrations. I am dealing with knee and IT probs right now too and I know how frustrating and hopeless and just annoying it can be. But resting, and stopping when its hurting, is so important. Hang in there.

  19. [...] After realizing that my knee’s still not ready for running, I resorted to alternate workouts this week. My bike’s been having some problems with tire inflation and gears, so I gave it a little check-up, tweaked some things and explored Gilbert’s canal system yesterday. [...]
